2 ¾ cup all-purpose flour
1 ½ cups packed brown sugar
2 cups old-fashioned rolled oats
1 ¼ teaspoons baking powder
¾ teaspoon baking soda
¾ teaspoon cinnamon
1 ¼ cup butter
2 pounds figs, trimmed & quartered
1 vanilla bean, scraped or 1 tablespoon vanilla bean paste
1 ¾ cups sugar
2 large lemons, zested and juiced
1/2 cup chopped roasted black walnuts
Combine the figs, sugar, lemon juice, and vanilla in a bowl. Mix until well combined. Leave to macerate for at least one hour.
Preheat the oven to 350°F. Spray a 9x13" with cooking spray. Line the pan with parchment paper so it hangs over the sides.
Combine the flour, oats, cinnamon, baking powder, brown sugar, baking powder, and salt in the bottom of a large bowl. Pour in the melted butter and mix until completely combined.
Divide the dough in half and press one half of the dough into the pan. You can use the bottom of a measuring cup or a large spoon. Bake for 15-20 minutes or until the edges begin to turn golden. Remove and let ...
