2 ¾ cup all-purpose flour
1 ½ cups packed brown sugar
2 cups old-fashioned rolled oats
1 ¼ teaspoons baking powder
¾ teaspoon baking soda
¾ teaspoon cinnamon
1 ¼ cup butter
2 pounds figs, trimmed & quartered
1 vanilla bean, scraped or 1 tablespoon vanilla bean paste
1 ¾ cups sugar
2 large lemons, zested and juiced
1/2 cup chopped roasted black walnuts
Combine the figs, sugar, lemon juice, and vanilla in a bowl. Mix until well combined. Leave to macerate for at least one hour.
Preheat the oven to 350°F. Spray a 9x13" with cooking spray. Line the pan with parchment paper so it hangs over the sides.
Combine the flour, oats, cinnamon, baking powder, brown sugar, baking powder, and salt in the bottom of a large bowl. Pour in the melted butter and mix until completely combined.
Divide the dough in half and press one half of the dough into the pan. You can use the bottom of a measuring cup or a large spoon. Bake for 15-20 minutes or until the edges begin to turn golden. Remove and let it cool.
Clip a candy thermometer onto a large pot. Add the macerated fig to the pot and bring to a boil. Cook until it reaches the jam stage, 220°F. The figs should be falling apart and thick consistency. Remove from the heat and let cool. Add walnuts to figs and mid until well combined.
Spread the fig mixture on the pre-baked bottom crust. Crumble the remaining dough over the figs, patting it down.
Bake for 20 minutes then rotate and bake another 20 or until edges are browned.
Remove from the oven and let cool completely before serving. Using the parchment overhang lift the bars out of the pan and cut into 24 squares.
NOTE:
If you do not have figs available you can use any kind of tender fruit such as berries and peaches.
